How do I set the variant in assembly drawing so that only components for that variant will show up in the assembly drawing ?

Depends a lot on what package you use. The route I use is to have a separate schematic for each variant and set a value of OMIT for each component that is not used on a particular variant. You can then have one board layout but separate build versions.
