I remember seeing somewhere that there is a way to control the connection sequence of a net in Specctra. I want to route from U1 to U2 and then U3 for instance. Is there not a way to do this?

Probably the easiest way to do this is use route scheduling in Allegro, search the documentation, there is an animated tutorial as well as a several page tutorial, it actually quite simple to do, only involves selecting a net and then clicking on connection points in sequence.
